Le <strong>17 f\u00e9vrier 2025<\/strong>, l&rsquo;initiative fera une halte \u00e0 l&rsquo;<strong>ALMA &#8211; \u00c9cole internationale de cuisine italienne<\/strong>, pour une r\u00e9union consacr\u00e9e \u00e0 l&rsquo;analyse et au partage des r\u00e9sultats de cette \u00e9tude innovante sur la gestion du levain et les diff\u00e9rentes techniques de production du panettone. <\/p>\n<h2><strong>Un projet pour valoriser l&rsquo;art du levain<\/strong><\/h2>\n<p>Con\u00e7u et r\u00e9alis\u00e9 par <strong>Agugiaro &amp; Figna Molini<\/strong> en collaboration avec <strong>Giulia Miatto<\/strong>, responsable technique de l&rsquo;entreprise pour les \u00e9trangers en boulangerie et p\u00e2tisserie, le projet a \u00e9t\u00e9 cr\u00e9\u00e9 dans le but d&rsquo;explorer et d&rsquo;am\u00e9liorer les diff\u00e9rentes m\u00e9thodes de traitement du panettone, l&rsquo;un des symboles de la p\u00e2tisserie italienne. La recherche se concentre sur l&rsquo;analyse des diff\u00e9rentes mani\u00e8res de manipuler le <strong>levain<\/strong>, en comparant les approches traditionnelles et les nouvelles interpr\u00e9tations, en mettant l&rsquo;accent sur les variables qui influencent la qualit\u00e9 du produit final. <\/p>\n<p>La n\u00e9cessit\u00e9 de codifier les techniques et les m\u00e9thodologies pour la diffusion de la culture du panettone \u00e0 l&rsquo;\u00e9tranger est l&rsquo;une des principales motivations du projet. Dans un march\u00e9 international o\u00f9 la demande de produits de boulangerie italiens authentiques augmente, l&rsquo;\u00e9tude approfondie des diff\u00e9rentes techniques de levage devient essentielle pour garantir des normes de qualit\u00e9 \u00e9lev\u00e9es et pr\u00e9server le v\u00e9ritable savoir-faire des p\u00e2tisseries italiennes. <\/p>\n<h2><strong>L&rsquo;ALMA est le th\u00e9\u00e2tre d&rsquo;une confrontation entre l&rsquo;artisanat et la recherche scientifique<\/strong><\/h2>\n<p>L&rsquo;\u00e9v\u00e9nement \u00e0 <strong>ALMA<\/strong> sera un moment de synth\u00e8se entre les connaissances pratiques des artisans et l&rsquo;analyse scientifique r\u00e9alis\u00e9e dans le cadre du projet. Outre les p\u00e2tissiers impliqu\u00e9s dans l&rsquo;\u00e9tude, les r\u00e9sultats de l&rsquo;analyse technique r\u00e9alis\u00e9e en collaboration avec l&rsquo;<strong>Universit\u00e9 de Parme<\/strong>, qui a soutenu le projet visant \u00e0 \u00e9valuer objectivement l&rsquo;impact des diff\u00e9rentes m\u00e9thodes de gestion du levain sur la structure, la saveur et la conservation du panettone, seront \u00e9galement pr\u00e9sent\u00e9s. <\/p>\n<p>Au cours de la journ\u00e9e d&rsquo;\u00e9tude, les donn\u00e9es recueillies sur les quatre principales techniques de gestion du levain seront analys\u00e9es et discut\u00e9es : le levain <strong>libre, le levain liquide, le levain li\u00e9 et le levain g\u00e9r\u00e9 \u00e0 l&rsquo;eau<\/strong>. Chaque m\u00e9thode a ses propres caract\u00e9ristiques et influence de mani\u00e8re significative les propri\u00e9t\u00e9s du produit final, de la texture \u00e0 la dur\u00e9e de conservation en passant par le d\u00e9veloppement des ar\u00f4mes. La discussion entre artisans et techniciens permettra de mieux comprendre comment ces variables affectent la qualit\u00e9 globale du panettone, donnant ainsi mati\u00e8re \u00e0 r\u00e9flexion aux professionnels du secteur.  <\/p>\n<h2><strong>Vers l&rsquo;avenir de la p\u00e2tisserie lev\u00e9e<\/strong><\/h2>\n<p>L&rsquo;un des aspects les plus int\u00e9ressants du projet \u00ab\u00a0Panettone Italiano\u00a0\u00bb est sa volont\u00e9 de stimuler le dialogue et le partage des connaissances entre les p\u00e2tissiers, sans se limiter \u00e0 une vision univoque de la tradition. La rencontre \u00e0 l&rsquo;ALMA visera \u00e9galement \u00e0 sensibiliser les nouvelles g\u00e9n\u00e9rations d&rsquo;artisans \u00e0 la vari\u00e9t\u00e9 des approches disponibles, en d\u00e9passant le concept de la \u00ab\u00a0bonne m\u00e9thode\u00a0\u00bb et en encourageant une plus grande ouverture d&rsquo;esprit dans la gestion des p\u00e2tes lev\u00e9es. <\/p>\n<p>Outre la table ronde pr\u00e9vue pour le <strong>17 f\u00e9vrier 2025<\/strong>, le projet comprend \u00e9galement une s\u00e9rie de <strong>d\u00e9monstrations pratiques avec des distributeurs<\/strong>, qui seront organis\u00e9es dans les mois suivants pour diffuser les r\u00e9sultats de la recherche et offrir aux professionnels des outils concrets pour am\u00e9liorer leur travail. La volont\u00e9 d&rsquo;<strong>Agugiaro &amp; Figna<\/strong> est de cr\u00e9er un r\u00e9seau de connaissances partag\u00e9es qui puisse contribuer \u00e0 l&rsquo;\u00e9volution du secteur, tout en pr\u00e9servant l&rsquo;authenticit\u00e9 de la confiserie italienne. <\/p>\n<p>La nomination \u00e0 ALMA marque une nouvelle \u00e9tape dans ce parcours de croissance et de comparaison.
