Selection
of wheat

To produce MIA, the best qualities of wheat are selected.
The wheat is analyzed in the laboratory to ensure its integrity before being processed.

Selection
of grains

The grain is cleaned of impurities and external elements to maintain high levels of sanitation.
Each grain passes under an “Optical Sorter” that performs precise sorting based on specific weight and any contaminants.

03.

Decortication
calibrated

Through targeted decortication, the grain is cleaned of external impurities.
The light abrasion that occurs through the Decortication process ensures high levels of sanitation.

04.

Grinding
stone

The grain, stripped of external impurities, is stone ground. This ensures the grain’s aroma and flavor.

05.

Grinding
in cylinders

The integration process is completed with cylinder milling: this calibrates the grain size of the flour so as to ensure great performance and consistency over time.

06.

Test

MIA flours are put to the test in the Product Research and Innovation Laboratory: here, yield and organoleptic characteristics are tested through product preparation. The light abrasion that occurs through the Decortication process ensures high levels of hygiene and sanitation.
